  1. Mix 9 cups flour, the eggs, 1/2 cup sugar and the melted butter, then incorporate 2 quarts of milk to make a crêpe batter. Cook crêpes until you run out of batter, about 3 minutes per side for each crêpe.

  2. Mix the egg yolks, the rest of the flour and the sugar. Boil the rest of the milk with the vanilla beans. Remove the vanilla and pour the milk into the mixture. Heat the mixture to the point where it takes on a creamy consistency.

  3. Spread this pastry cream on the first crêpe then cover with another crêpe. Begin again with pastry cream, and continue the layering until you have completed your crêpe tower.

  4. Finish with a layer of pastry cream, then dust with brown sugar. Use the blowtorch to caramelize the sugar, then slice and enjoy.
