Ingredients for 5 people

500 g of sweet potato

250 g of spinach leaves

2 egg whites

4 eggs

1 onion

150 ml of skimmed milk

100 g of feta

salt and pepper


Step 1/6

Peel the sweet potatoes and cut them into think slices. In a greased tin, arrange the sices on the bottom and sides of the tin. Bake for 10 minutes at 180°C.

Step 2/6

In a frying pan, fry the chopped onion and then cook the spinach separately over a low heat.

Step 3/6

In a bowl, mix the eggs, milk, turmeric, salt and pepper together.

Step 4/6

Place the cooked spinach and onion on the potato crust, then pour the egg mixture over the top.

Step 5/6

Cut the feta into pieces and arrange them on top of the mix.

Step 6/6

Bake for 35 minutes at 180°C, then enjoy.
