Extra moist banana bread: the healthy recipe

For a scrumptious, guilt-free breakfast!

Ingredients for 6 people

3 bananas

0.25 cup coconut oil

2 eggs

0.3 cup brown sugar

1 pincée vanilla extract

1 pincée cinnamon

0.4 cup almond milk

1.25 cups flour

1 tsp baking powder

1 tsp baking soda

1 pincée coarse sea salt

0.5 cup almond flour

Peel bananas. In a blender, blend only 2 bananas until puréed.

Melt coconut oil in a saucepan. In a bowl, whisk eggs with sugar, vanilla extract, and cinnamon. Add the melted coconut oil, mashed bananas, and almond milk. Mix well.

Add the flour, baking powder, baking soda, salt, and almond flour to the bowl.

Pour the batter into an oiled cake pan. Cut the remaining banana lengthwise and arrange both banana halves nicely on top. Sprinkle the top with a little brown sugar, if desired, and bake in the oven for 40-45 min. at 350 °F. Let cool before removing from pan.

Looking for a version without refined sugar? Replace the sugar with 2 ⅓ tbsp honey or agave syrup. You can also swap part of the white flour for whole wheat flour to increase your fiber intake. For a vegan banana bread, simply replace the eggs with ⅓ cup applesauce.
