Extra moist banana bread: the healthy recipe

Ingredients for 6 people
0.25 cup coconut oil
0.3 cup brown sugar
1 pincée vanilla extract
1 pincée cinnamon
0.4 cup almond milk
1.25 cups flour
1 tsp baking powder
1 tsp baking soda
1 pincée coarse sea salt
0.5 cup almond flour
Step 1/5Peel bananas. In a blender, blend only 2 bananas until puréed.
Step 2/5Melt coconut oil in a saucepan. In a bowl, whisk eggs with sugar, vanilla extract, and cinnamon. Add the melted coconut oil, mashed bananas, and almond milk. Mix well.
Step 3/5Add the flour, baking powder, baking soda, salt, and almond flour to the bowl.
Step 4/5Pour the batter into an oiled cake pan. Cut the remaining banana lengthwise and arrange both banana halves nicely on top. Sprinkle the top with a little brown sugar, if desired, and bake in the oven for 40-45 min. at 350 °F. Let cool before removing from pan.

Looking for a version without refined sugar? Replace the sugar with 2 ⅓ tbsp honey or agave syrup. You can also swap part of the white flour for whole wheat flour to increase your fiber intake. For a vegan banana bread, simply replace the eggs with ⅓ cup applesauce.
