Lamb Skewers

And a sauce to go with :)

1 lb ground lamb

1 egg

1 red onion

12 cherry tomatoes

12 mini bocconcini

2 puff pastries

1 egg yolk

1 cup greek yogurt

2 tbsp olive oil

1/2 lemon


1 tbsp mustard


Salt & pepper


6 skewers

Parchment paper

1 pastry brush

1. Mix ground lamb, egg, minced onion, salt, and pepper. Prick 2 cherry tomatoes and 2 mini bocconcini balls on each skewer. Wrap each skewer with meat and place on a baking sheet lined with parchment paper.

2. Cut 12 slices from the length of the puff pastry. Wrap 2 strips around each skewer, brush the pastry with egg yolk, sprinkle with rosemary, and bake for 20 minutes at 375 °F.

3. Mix the yogurt, olive oil, lemon juice, chopped parsley, salt, pepper, and mustard. Enjoy the skewers by dipping them in the sauce!
