Spaghetti Squash Carbonara

Ingredients for 4 people

1 cup of diced bacon

1 onion

2 spaghetti squash

1 1/4 cups of sour cream

3/4 cup of shredded mozzarella

4 egg yolks

parsley

salt & pepper

Step 1/3

Cook the bacon with the chopped onion. Cut the spaghetti squash in half in the length-wise. Remove the seeds and cook the squash for 10 minutes in boiling water.

Step 2/3

Remove half of the flesh of the spaghetti squash by scraping it with a fork. Mix this with the bacon, cream, salt and pepper.

Step 3/3

Place this mixture in the cooked squash placed on a baking sheet covered with parchement paper. Sprinkle with mozzarella and place in the oven for 10 minutes at 350 °F. 3 minutes before taking them out, place an egg yolk on each squash. When they come out of the oven, sprinkle with parsley and enjoy.
