Ingredients for 4 people
3/4 LB fingerling potatoes
28 slices of melting cheese, Raclette if you can find it
2 slices of ham
2 slices of prosciutto
Step 1/3Pan-fry the fingerling potatoes. Line the bowls with plastic wrap and cover the inside with 6 slices of cheese. Add 1 slice of ham to 2 bowls and 1 slice of prosciutto to the other bowls.
Step 2/3Divide the fingerling potatoes among the bowls and sprinkle with chopped scallions. Cover with 1 slice of sliced cheese to close the bowl and then tighten into a ball using cling film. Place in the freezer for 30 minutes.
Step 3/3Remove the plastic wrap from the frozen balls, then bread the balls by passing them twice successively through the flour, beaten eggs and breadcrumbs. Fry, drain well and enjoy.
