Spicy Fried Chicken Sliders

Ingredients for 2 people

3 cups of flour

1 tablespoon salt

3 tablespoons baking powder

1 cup of sugar

12 ounces of beer

1/2 stick butter, melted

3 chicken breasts

bottle of sriracha

3 balls mozzarella

2/3 cup of cornstarch

chopped ginger

chopped garlic

salt and pepper, to taste

vegetable oil, for frying

1 tablespoon canola oil

red chili, chopped

1 cup of soy sauce

1/2 cup of rice syrup

1 tablespoon vinegar

1 tablespoon raw cane sugar

2 tablespoons peanuts, chopped

1 tablespoon mustard

lettuce, for garnish

Rolling pin

Aluminum foil

Plastic wrap

Parchment paper

Step 1/5

Create a strip of aluminum foil by folding the edge towards the center. Continue folding until you have 2 strip about 2 inches wide. Fold the edges of the strip together a few times to create a seam. Open the circle of foil and place on a baking tray lined with parchment paper. Repeat two more times for a total of three foil rings. Set aside.

In a bowl, add flour, salt, baking powder, sugar and beer. Whisk to form the dough. Add melted butter and whisk until all of the butter is incorporated. Fill the foil rings halfway with the dough and bake for 20 minutes at 350 °F.

Cover the inside of 3 small bowl with plastic wrap. Set aside. Butterfly three chicken breasts and place them on parchment paper. Cover with a second sheet of parchment paper and flatten the chicken with a rolling pin. Place each flattened breast inside of a plastic covered bowl. Set aside. Fill the center of each ball of mozzarella with Sriracha. Place a mozzarella ball in each bowl and fold the chicken over the cheese. Gather the ends of the plastic wrap together and twist to secure tightly. Freeze for 2 hours.

In a bowl, combine cornstarch, ginger, garlic, salt and pepper. Mix well. Coat each frozen ball in the cornstarch mixture and fry in vegetable oil.

In a pan, heat canola oil, garlic, red chili, soy sauce, rice syrup, vinegar, raw cane sugar, peanuts and mustard. Whisk together and boil until the sauce is reduced. Place the fried chicken in the sauce and continue to cook, basting the chicken with the sauce. Slice the buns in half and garnish with lettuce. Place the chicken on top and drizzle with more peanut sauce. Enjoy.
