Total time: 4 hours
Prep time: 2 hours 55 minutes, Cook time: 30 minutes, Rest time: 35 minutes
Ingredients for 6 people
3 cups of whipped cream
2 cups of sugar
1 cup of milk
1 cup of butter
2 tbsp of yeast
4 1/2 cups of flour
1/2 cup of brown sugar
1 caramel apple
1 cup of pecans
35 werther's caramels
1 cl of water
1 caramel sauce
1 lemon juice
In a large bowl, mix the warm milk, ½ cup of sugar, and yeast. Allow to proof 5 minutes, then add the salt, egg an 6 tbsp of butter. Whisk together, then add the flour and mix until the dough is smooth. Knead the dough for 2 minutes then place in a greased bowl. Cover the dough and let rise until doubled in size. While the dough is rising, prepare the cinnamon roll filling. In a small bowl, stir together the softened butter, brown sugar, cinnamon and a pinch of salt. Set aside.
Punch down the dough, then roll into a log. Cut the log into 3 equal portions. Form 3 balls and place on a baking sheet. Cover and allow the dough to rest for 15 minutes. Begin by rolling out the first piece of dough in one large circle. Spread with cinnamon roll filling and continue the process with the second ball of dough. For the third ball of dough, roll out and place on top of the second dough. You will have three layers. Place a medium sized bowl in the center of the dough. With a pizza cutter, make 16 cuts in the dough, just along the edge. One at a time fold each portion towards the interior and using a chopstick fold and pinch the edges of the pieces together. Continue until all the portions have been folded and pinched together. Let the dough rise for 15 minutes.
Preheat oven to 350°F. Prick the center of the dough with a fork. Make a bowl with aluminum foil and fill it with dried beans to prevent the center from rising during baking. Brush the edges of the pie with egg wash. Bake for 20 minutes then take off the pie weights and then continue baking another 10 minutes.
Prepare a syrup in a small saucepan, by boiling 4 cups of water, 1 cup of sugar and the juice of one lemon. Cut two apples into thin slices and place in a heat safe bowl. Pour the hot syrup over the apple slices and allow to cool. On a griddle melt 2 tablespoons of butter, add 1 cup of Werther's Soft caramels, stir until the caramels are melted and bubbly. Add in 2 chopped apple pieces and stir until covered. Pour in the chopped toasted pecans, mix until combined then pour the apple, pecan caramel into small dish. Place in the refrigerator to cool.
When the cinnamon roll pie is done baking, remove from the oven and let cool completely. Line a small bowl (about the diameter to fit in the center of the cinnamon roll pie) with plastic wrap. Starting in the center, line the entire inside of the bowl with the poached apple slices. Spread a layer of whipped cream followed by half of the apple pecan caramel. Cover with whipped cream then add a layer of ice cream. Cover completely with a thin layer of whipped cream and place into the freezer to set completely.
Spread the second half of the apple pecan caramel in the center of the cinnamon roll pie. Place the frozen pie filling in the center. Top with whipped cream, chocolate and caramel. Allow to sit for 5 minutes at room temperature before serving. Enjoy!
