Dip the apple rings in the batter then fry in hot oil until golden brown. Make a glaze by combining 1 1/3 cups of powdered sugar with 3-6 tbsp of water. Pour glaze over fritters covering completely.
Make a chocolate crust by mixing 1 stick of butter with the remaining powdered sugar. Then mix in the vanilla extract and remaining egg. Once mixed, add in remaining flour and cocoa powder. Using your hands, press the dough into a lined pie plate. Bake for 1 hour at 350 °F.
In a small sauce pan, bring to boil the corn syrup and remaining sugar and water. Once the caramel starts to turn brown, mix in 1/2 cup of heavy cream. Add a pinch of salt and mix in the remaining butter. Pour caramel into chocolate crust. Mix together melted chocolate and remaining cream then spread over caramel. Arrange the fritters on top of the pie. Decorate with cherries and a dusting of powdered sugar. Cut yourself a slice and enjoy!
